This is my favorite fudge recipe. It is quick and easy and always turns out good.
- 8 oz Velveeta
- 1 c. Butter (I use Parkay instead)
- 1.5 tsp vanilla
- 2 lb confectioners sugar
- 1/2 c. cocoa
Melt the Velveeta and butter. This can be over low heat in a heavy pan or in a microwave. Stir frequently to mix it together well. When it is melted and smooth, remove it from the heat (or microwave) and stir in the vanilla.
Mix together the cocoa and powdered sugar in a large bowl. Pour the melted cheese/butter/vanilla mixture over it and stir well. It can be a little stiff, so be prepared to really stir to mix it all together.
Pour it into a buttered 9" X 13" dish, pat pecans or other nuts on the top (optional) and pop it in the fridge for a little while. It sets up quickly and is ready to serve almost immediately.
